Why is olive oil said to be good for people? How does it work and what does it do?

What are the health benefits of Olive Oil?Why is olive oil said to be good for people? How does it work and what does it do?
Its not olive oil as such, it it polyunsaturated and monounsaturated oils that are good for you. And olive oil is high in both.

These types of oils do not raise cholesterol like saturated oils, and they do not lead to atherosclerosis (plaques on your arteries).

However they are just as fattening as every other oil. And they are fine to eat cooked.

Olive oil should be used to replace other oils like palm oil, beef tallow, coconut oil and vegetable oil (often its palm oil) which can be high in saturated fats and are often used in pre-prepared foods. It should not be added on top of these foods. Why is olive oil said to be good for people? How does it work and what does it do?
